Crab Potato Cakes

Super simple but amazingly tasty!

Ingredients:
1 lb. Blue Crab Claw Meat
1 cup mashed potatoes (leftovers are perfect)
1 egg, beaten
1/2 tsp. salt
dash pepper
dash onion salt
fat for cooking - lard, oil, bacon grease

That’s it! So simple.

Instructions:
Combine all ingredients. Shape into 12 cakes. Place cakes in a heavy frying pan (cast iron is perfect) which contains about 1/8 inch deep of fat, hot but not smoking. Fry at moderate heat. When cakes are brown on one side, turn very carefully and brown on the other side. Cooking time is approximately 5 to 8 minutes. Drain on paper towels and serve! Yum! Great anytime of day.

TIP-Feel free to doctor this recipe to your taste! Add a dash of Old Bay, some parsley, etc. Using the potatoes and the claw meat will make them sweet and yummy!

TIP #2-Make some crab dip and use as a topping!
